The Shock Freezer PRO 13 x GN1/1 is an innovative and efficient device designed for advanced gastronomic needs. This freestanding equipment is ready for immediate use, equipped with its own refrigeration unit, eliminating the need for an external cooling source. Intuitive control is facilitated through Easy Touch technology, operated via a 7-inch touchscreen. Additionally, the device features predefined programs and allows the creation of individual programs through the USB interface.
Chamber configuration options include cross-loading for 13 x GN1/1-65 mm depth. There is also the option to use additional guides, enabling loading of 17 x GN1/1-40 mm depth or 26 x GN1/1-20 mm depth, as well as 26 x EN6040-30 mm (max. depth).
The device stands out with impressive shock freezing or freezing performance for a cycle of up to 65 kg. According to DIN 18872-5 standards, rapid freezing performance is 47 kg (+65°C/+3°C) in 90 minutes, while shock freezing performance is 47 kg (+65°C/-18°C) in 240 minutes.
The cycle can be initiated immediately after loading, regardless of the product temperature, significantly reducing the preparation time for dishes. Standard equipment includes 13 pairs of adjustable guides and a 3-point temperature probe.
