Professional 13 cm Boning Knife

A knife designed for separating meat from bones, this professional tool features an ergonomic handle. The blade is crafted from high-quality chrome-molybdenum steel, vacuum-hardened to a Rockwell hardness of 56-57. The highly polished matte surface ensures the highest possible rust resistance.

The handle consists of two elements. The inner, red core provides stability to the grip, while the outer layer is made of particularly soft synthetic material.

The synthetic handle is food-safe and complies with the requirements of the following legal regulations (each with all amendments and in the currently valid version at the time of this declaration):

  • Regulation (EC) No. 1935/2004 on materials and articles (including active and intelligent materials and articles) intended to come into contact with food and repealing Directives 80/590 / EEC and 89/109 / EEC - in their currently applicable version.
  • Regulation (EU) No. 10/2011 of 14.01.2011 on plastic materials and articles intended to come into contact with food.

While the knives are dishwasher-safe, the manufacturer recommends hand cleaning to protect the cutting edge.
