During the day, when the knife blade dulls, the operator can slide the blade through the unique Ergo Steel II Plus bar spring and straighten the edge in seconds. During normal use, the knife may lose its sharpness and cannot be moved again using the edge maintenance device. Simply run the blade through the thinning insert a few times to thin the blade.
Using the new Ergo Steel II Plus gives you the ability to bring the knife back to a thinned state without leaving your workstation, thereby maintaining a razor-sharp edge between sharpening. The Ergo Steel II Plus is an all-in-one device consisting of a pair of rotating hardened stainless steel hardened bars on a molded food grade polypropylene base with an integrated carbide insert for thinning the blunt edge of the knife.
Our carbide insert is machined as one piece to maintain the correct angle - never needs adjustment. Beneath each rotating bar, fully enclosed spring mechanisms ensure perfect tension between the knife edges and the stainless steel bars. Both sides of the edge are straightened at the same time, ensuring a perfect edge in seconds. Requiring no training to use, Ergo Steel II Plus can be hand held with the optional handle or mounted on a workstation.
