A Giesser knife with a blade made of high-quality chrome-molybdenum steel, vacuum-hardened to a hardness of 56-57 Rockwell degrees. The highly polished surface ensures maximum rust resistance and edge retention. Hand grinding provides perfect sharpness.

The standard handle is made of synthetic material, exceptionally pleasant to the touch, and has a non-slip texture (TPE). The well-shaped protective nose ensures a secure grip and reduces the risk of the hand slipping while holding the knife.

The plastic handle is approved for contact with food and complies with the requirements of the following legal regulations (each with all amendments and in the version applicable at the time of submitting this statement):

  • Regulation (EC) No. 1935/2004 on materials and articles (including active and intelligent materials and articles) intended to come into contact with food and repealing Directives 80/590/EEC and 89/109/EEC – in the currently applicable version.
  • Regulation (EU) No. 10/2011 of January 14, 2011, on plastic materials and articles intended to come into contact with food.

The knives are dishwasher safe. However, for the protection of the cutting edge, we recommend manual cleaning.
