Professional knife for the meat industry, slaughterhouses and butchers, intended for cutting carcasses. Made of the best materials, chrome-molybdenum stainless steel, which has been additionally hardened in a vacuum to the level of 56-57 degrees Rockwell. The blade of the knife is narrow and curved. The shape of the blade makes it especially easy to work with drawn cuts. The blade of the knife is polished to a high gloss which provides even higher protection against rust and preservation of the cutting edge.

The handle consists of two elements. The internal - red core ensures the stability of the handle. The outer shell is made of a particularly soft plastic.

The plastic handle is suitable for contact with food and complies with the requirements of the following legislation (each with all amendments and in the current version at the time of this declaration):

  • Regulation (EC) No 1935/2004 on materials and objects (including active and intelligent food contact materials and objects) intended to come into contact with food and repealing Directives 80/590/EEC and 89/109/EEC - in their current current valid version.
  • Regulation (EU) No. 10/2011 of 14/01/2011 on materials and objects made of plastic intended to come into contact with food.

The knives can be washed in the dishwasher. However, the manufacturer recommends manual cleaning to protect the cutting edge
