The IK 30S-EB Bartscher induction cooker is a versatile appliance that will perform well in both professional kitchens and home use, providing efficient cooking capabilities.

Built-in induction hobs are specialized heating devices that use electromagnetic field technology to directly heat ferromagnetic cookware. The process of electromagnetic induction generates heat exclusively at the bottom of the cookware, eliminating energy losses through heat conduction. This technology achieves an energy efficiency of 85-90%, whereas traditional electric hobs reach only 65-70% efficiency.

In professional gastronomy, a built-in commercial induction hob offers precise temperature control in the range of 60°C to 240°C. Heating 1 liter of water from room temperature to boiling takes an average of 3-4 minutes at 3500W power. Induction hobs eliminate the risk of burns from the cooking surface, as the hob itself remains cool during cooking.

The design of built-in hobs allows integration with worktables of 20-40mm thickness. Standard cut-out dimensions for installation are 265x365mm for single-burner models, 530x365mm for double-burner models, and 530x590mm for four-burner models. The installation depth is typically 55-65mm, allowing mounting in standard catering countertops.

  • Single-burner hobs - compact devices with 3500W power, heating zone Ø 220mm. Installation dimensions 265x365mm. Ideal for specialized stations such as wok, sauces, or tempering. Control panel with 10 power levels and timer up to 180 minutes.
  • Double-burner hobs - total power 7000W (2x3500W), two independent heating zones Ø 220mm each. Installation dimensions 530x365mm. Equipped with separate power regulators for each zone and a boost function increasing power by 20% for 10 minutes.
  • Four-burner hobs - total power 14000W (4x3500W), four independent heating zones. Installation dimensions 530x590mm. Designed for intensive work in large kitchens. Each zone equipped with a digital temperature display and timer.
  • Modular hobs - system allowing any configuration of heating zones in the worktop. Modules 265mm wide can be combined into sets of 2, 3, 4 or more. They enable the creation of a cooking line adapted to the menu and workflow.

Technical specifications of built-in induction hobs

Power supply: Single- and double-burner hobs require 400V/3N~/50Hz power supply with 16A protection. Four-burner models require 25A protection. All devices are equipped with a 1.5m H07RN-F 5x2.5mm² power cord with CEE plug.

Construction materials: Heating surface made of 4mm thick ceramic glass, resistant to impacts and sudden temperature changes. Housing made of 0.8mm AISI304 stainless steel. Control elements with IP65 protection class, ensuring splash resistance and easy cleaning.

Safety systems: Automatic shut-off when no cookware is detected on the heating surface (reaction time 30 seconds). Overheating protection with temperature sensor shutting down the device at 280°C. Overvoltage and short-circuit protection. Child-lock function blocking the control panel.

Operating parameters: Heating zone warm-up time to full power: 1-2 seconds. Temperature control accuracy: ±5°C. Operating noise level: below 45dB. Device lifespan under intensive use: 8-10 years. Minimum cookware diameter: 120mm, maximum: 260mm.

Maintenance and cleaning: The ceramic glass surface requires daily cleaning with specialized agents after cooling down. Cooling fans must be cleaned every 3 months with compressed air. Electrical connections should be checked once a year. Temperature sensors must be calibrated every 2 years by an authorized service center.

The choice of a suitable built-in induction hob depends on the intensity of kitchen work, type of dishes prepared, and available space. For small catering businesses, single- or double-burner models are sufficient, while high-turnover restaurants require four-burner or modular solutions enabling simultaneous work at multiple stations.
