Giesser's skinning knife with a 15 cm blade

The Giesser knife features a blade made from high-quality chromolybdenum steel, vacuum-hardened to a hardness of 56-57 Rockwell. The highly polished surface ensures maximum rust resistance and edge retention. Hand sharpening provides perfect sharpness.

The standard handle made of plastic is crafted from a particularly pleasant-to-touch, non-slip material (TPE). A well-designed protective nose ensures a secure grip and reduces the risk of the hand slipping while holding the knife.

The plastic handle is approved for contact with food and complies with the requirements of the following legal regulations (each with all amendments and in the currently valid version at the time of submitting this statement):

  • Regulation (EC) No 1935/2004 on materials and articles (including active and intelligent materials and articles for food contact) intended to come into contact with food and repealing Directives 80/590/EEC and 89/109/EEC – in its currently valid version.
  • Regulation (EU) No 10/2011 of 14 January 2011 on plastic materials and articles intended to come into contact with food.

The knives are dishwasher safe. However, for the protection of the cutting edge, hand cleaning is recommended.
