Professional knife of the German brand Giesser, made of chrome-molybdenum steel, vacuum-hardened to a Rockwell hardness of 56-57 degrees. The knife is especially recommended for meat and food processing plants, butchers, slaughterhouses and butchers. Bones are used to separate meat from bones, but can be used to cut completely different food products.
